Great Day Camp in Hudson Valley


My daughter has gone to Camp Hillcroft for the past two summers, and we anticipate many more. The camp is extremely well-organized with a wide variety of activities, including a strong swimming program. She is outdoors every day and comes home tired but happy. She does see friends from school at camp, but also has many new "camp friends" that we look forward to seeing each year. I am glad that she has an opportunity to develop interests and confidence in a supportive, friendly environment in the summer.

A hugely popular area for obvious reasons (!)   is Cooking at Camp Hillcroft.  Campers learn all about the Food Pyramid, general nutrition and create wonderful snacks to eat!  Cookies, pretzels, pizza and smoothies remain firm favorites every summer! 2nd-9th graders enjoy this program area very much.  Under the instruction of our CIA (Culinary Institute of America) Graduate the campers not only enjoy yummy food but they experience the preparation work behind all the food that they create.  After prepping and cooking the item of the day campers enjoy time at the end of each class and get to sample the food!

COOKING:  This summer’s theme is Disney Movies. Snow White is our movie this week, so we made apple pie. Do you remember that apple in the movie? Pie Crust (makes 4 mini pies) 2 ½ c flour 1 tsp salt 2 sticks butter, cold, cut into small pieces ¼ c, water, COLD Combine flour, salt, and butter in food processor. Pulse until you see course crumbs. Slowly add cold water. Do not process over 30 seconds. Dough will come together. You don’t need to use all the water when the dough is finished being processed. Divide into 8 equal pieces and refrigerate until needed. Roll out 1 piece of dough for bottom crust, add filling, and use 2nd piece of dough for top crust. Poke hole into top to allow steam to escape. Apple Filling8 Golden Delicious (or any type) apples 1 tsp lemon juice ¾ c sugar 4 TBS flour ¾ tsp cinnamon ½ tsp vanilla extract ¼ tsp nutmeg 3 TBS butter, cut into small pieces Peel and slice apples, mix with lemon juice in a large bowl. In a small bowl, combine sugar, flour, vanilla and spices. Mix into apples and toss to coat. Add butter pieces and toss. Put into 4 mini pie pans, cover with top crust, and bake at 450°F for 20 minutes.
